The mission of The Center for Nutrition Studies is to promote optimal nutrition through science-based education, advocacy, and research. By empowering individuals and health professionals, CNS aims to improve personal, public, and environmental health. 


The T. Colin Campbell Center for Nutrition Studies was established to extend the impact of Dr. Campbell's life-changing research findings. For decades, Colin has been at the forefront of nutrition education and research. As the coauthor of the bestselling book, The China Study, his legacy, the China Project, is one of the most comprehensive studies of health and nutrition ever conducted. 


In this conversation, LeAnne describes the myriad educational programs and opportunities offered by CNS. Perhaps you would like to experience a 7-day retreat, eating whole, plant-based meals and learning the scientific basis for eating this way, while living in a beautiful natural setting. Maybe you would like to join Whole Communities and become part of a group of people who share ideas, recipes and social gatherings. 


CNS offers certificate programs within which you may develop expertise in the science and teaching of whole plant-based eating.


The Plant-Based Nutrition Certificate is an online, video-based course focused on the science behind a plant-based diet. It offers students the knowledge to improve overall health, learn new skills, and even inspire a career change. 


The Food and Sustainability Certificate program is an online, self-paced program. Led by LeAnne’s son and Colin’s grandson Steven Disla, this program brings together food and sustainability experts to address the most critical issues facing us today: the environmental impacts of food production, the importance of food justice and accessibility, the complexity of international food systems, and most importantly, the positive changes we can make every day with our food choices.


LeAnne’s passion for the CNS mission is not only influenced by her childhood experiences around the dinner table. As a young adult, she joined the Peace Corps and lived in the mountains of the Dominican Republic. Thirty-five years later, she runs an education center in the same area, where she has witnessed devastating land-use changes, including deforestation, freshwater loss, and biodiversity loss. All this is due to our food system. To explore how and why this happens, she has established a center there, and together with her son, hosts several retreats focused on food and sustainability.


When I was in the Peace Corps in the Dominican Republic, the people grew food in a tiered system, and that is what we have developed on the two acres of land at our center. Over a two-year period, we harvest between 40,000 and 80,000 pounds of food on this land. Today, the land beside the center is used for cattle; one cow needs two acres and produces 350 pounds of meat over two years. That’s a big difference: 40,000 pounds of food compared to 350 pounds of food.
